This lot is a Caturra & Sarchimore a SHB EP variety – SHB means strictly hard bean, and is a coffee grading term indicating coffee grown at a high altitude, EP meaning European preparation - with a high level of purity. Aquiares have found these ‘traditional’ varieties well-suited to the farm’s high elevation (grown above 1,200 meters in most cases) and as consistently yielding a quality cup.
 
The highly rated Costa Rican coffee Caturra (Coffea arabica var. Caturra known to Aquiares as their Faithful variety) and Sarchimore (Sarchimore beans are a hybrid coffee variety created by crossing the Timor hybrid with the Villa Sarchi variety, a natural mutation of Bourbon). 
 
Aquiares Farm is nestled between the Aquiares and Turrialba rivers. The size of the farm is 924 Hectares at altitude od 1,000 to 1,400 meters above sea level. All Aquiares coffee is picked by hand to ensure consistent high quality. The skilled hands of the pickers represent the farm’s most valuable asset. Pickers hail from the community of Aquiares, nearby towns, and even from the neighboring country of Nicaragua. The farm ensures that all workers have a safe work environment and a comfortable place to live. Workers coming from further away can live in on-site housing and use a children’s day-care. 
 
The Region where the farm is located used to be the center of the Huetar pre-Columbian civilization. "Aquiares" means "land between two rivers" in Costa Rica's indigenous Huetar language. Occasionally artefacts are found among the coffee trees. On the farm is a pre-Columbian aquiver: "Ojo de Agua El Pizote" - is a natural spring within an indigenous aqueduct located on Aquiares Farm
